Have some brownies to use up?

As its hopefully getting warmer and evenings are getting longer, how about crushing up any leftover brownies, then you can make your very own brownie ice cream. If (like me) you have every gadget going, then make vanilla ice cream from scratch and in the last 10 mins add some crumbled up brownies! Alternatively buy some good quality vanilla ice cream, leave out to soften, crumble in some brownie and hey presto, you have a delicious pudding! Also delicious with salted caramel sauce drizzled on top!


Recipe for Vanilla Brownie Ice Cream (made in an ice cream machine)

220 ml Full fat milk (although can use semi-skimmed, won't be as creamy)

150g Granulated sugar

450ml Double Cream

1tsp vanilla bean paste or vanilla extract

A handful or more of crushed up chocolate brownies (any flavour)

1) pour milk and sugar into a medium bowl and whisk until sugar is dissolved

2) Stir in cream and vanilla, cover and if time refrigerate for 2 hours or overnight

3) Turn ice cream maker on.. set timer according to model used but I tend to do till about 35 mins then add the brownies then set it for another 10 minutes

4) store in airtight container in the freezer
